These no-bake bars are unapologetically indulgent — perfect for anyone who loves peanut butter. 
After a stretch of light, fruit-forward summer recipes, I wanted to make something different: either something fresh and healthy or something completely decadent. As you can guess, decadence won.

This week was a big one at home — our oldest got their first car, which felt both exciting and a little terrifying. Then a teenager accidentally gave me a senior discount at the grocery store (I’m still in my 30s!), which sent me into a fit of laughter and tears. I came home and made these loaded peanut butter rice crispy treats, and they were exactly what I needed. When life gets messy, pour some chocolate on it — that’s my motto.

These bars are rich, chewy, and packed with peanut butter flavor. The bottom layer is a classic peanut-buttered rice cereal, a creamy peanut butter-sweetened filling sits on top, and a glossy chocolate layer studded with M&M’s finishes each square. They set quickly and store well in a cool place — ideal for parties, potlucks, or any moment that calls for an extra-special treat.

Ingredients
- 1 cup corn syrup
- 1 cup sugar
- 1 cup peanut butter
- 6 cups crisp rice cereal
- 1 1/2 cups peanut butter (for filling)
- 1/2 cup melted butter
- 2 1/2 cups powdered sugar
- 1 11.5 oz bag chocolate chips
- 1/2 cup M&M’s
Instructions

In a saucepan, combine the corn syrup and sugar. Cook over medium heat, stirring frequently, until the mixture comes to a boil.

Remove from heat and stir in 1 cup peanut butter until smooth. Fold in the crisp rice cereal until evenly coated.

Press the mixture firmly into a well-greased 9×13-inch pan.

In a mixing bowl, combine the remaining 1 1/2 cups peanut butter, melted butter, and powdered sugar until smooth and spreadable.

Spread the peanut butter filling evenly over the rice crispy base.

Place the chocolate chips in a microwave-safe bowl and melt at 50% power in 30-second intervals, stirring between each, until completely smooth.

Pour the melted chocolate over the peanut butter layer and scatter M&M’s on top.

Allow the bars to cool completely so the layers set.

Store the finished bars in a cool place.
