Monster Meringues Cake – A Free Cake Decorating Tutorial

This Monster Meringues cake video tutorial is the cutest! So much fun for monster parties for kids or for Halloween!

This Monster Meringues cake is sure to be a crowd-pleaser. The meringues are sweet, crisp, and make delightful decorations for a playful cake.

Ingredients

For the Meringues

  • 4 egg whites
  • Pinch of salt (finer salts like popcorn salt work well)
  • 3/4 cup superfine sugar (or processed granulated sugar)
  • 1/2 teaspoon clear vanilla (use clear to avoid color change)
  • 1 cup powdered sugar, sifted
  • Coloring gel (bright colors like sky blue, deep pink, and electric green work well)

For Decorating the Meringues

  • Googly eyes (mix of small and large sizes)
  • White candy melts or coating for attaching eyes

For the Cake

  • Your preferred cake recipe and size. The example shown uses an 8-inch tier frosted with classic vanilla buttercream.

Miscellaneous

  • Disposable piping bags, small angled spatula, cake base or pedestal, turntable (optional), lollipop sticks (for added height), cookie sheet, parchment paper
  • Piping tips: 1M and 2D are useful; some shapes work fine with a bag snipped at the end

Instructions

For the Meringues

Preheat oven to 175°F (use the lowest rack). Line a baking sheet with parchment paper.

Make sure your mixing bowl and whisk attachment are completely clean and free of grease. Beat the egg whites and salt on medium-high speed with a whisk attachment until foamy and soft peaks form (about 50 seconds).

Gradually add the superfine sugar and clear vanilla while mixing at medium speed. Add the powdered sugar (reduce speed as needed to avoid a powdered-sugar cloud), then increase to medium-high until stiff peaks form.

If coloring, divide the meringue into smaller bowls and gently fold in gel color.

Pipe your desired shapes onto the prepared parchment-lined baking sheet.

Bake on the lower rack for about 2 hours, or until the meringues are dry and lift easily. Turn the oven off and leave the pan inside for an additional hour to cool and dry further.

Store cooled meringues in an airtight container away from strong light to avoid fading. They will keep at room temperature for up to three weeks, or longer in the freezer.

Decorating the Meringues

Attach eyes using small amounts of melted candy melts as edible glue. For added height, secure meringues to lollipop sticks with melted candy melts and allow to set, or pipe them directly onto sticks before baking.

Decorating the Cake

Frost your cake as desired. For a quick textured look, use a spatula to create fur-like strokes across the frosted cake. Arrange the meringue monsters on top and around the base for a playful finish.
