These cupcakes are delightful to make and even more fun to eat. Using a simple boxed cake mix and strawberry Jell-O, you can assemble an impressive dessert with minimal effort.

Strawberry Jell-O Poke Cupcakes

- 1 box yellow cake mix
- ingredients listed on the cake mix box to prepare the cupcakes
- 1 6 oz box strawberry instant Jell-O
- 24 standard cupcake liners
- 1 container strawberry-flavored frosting
- 1 container frozen Cool Whip, thawed
- 1 pkg fresh strawberries

Prepare the cupcakes following the directions on the cake mix box. Bake in standard-size cupcake liners and let them cool completely.

Using a fork, skewer, or similar tool, poke several holes across the top of each cooled cupcake. Arrange the cupcakes on a foil-lined baking sheet to catch any drips.

Prepare the strawberry Jell-O according to package directions. Carefully spoon the liquid Jell-O into the holes in each cupcake, pressing the top gently so the gelatin fills the cavities. Refrigerate for 30 minutes to an hour to allow the Jell-O to set.

Make the frosting by combining the container of strawberry frosting with the thawed Cool Whip. Beat together with an electric hand mixer until smooth and well blended.

Pipe or spoon the frosting onto the set cupcakes. Use a piping bag with a large tip for a neat finish, or put the frosting in a zip-top bag, snip a corner, and squeeze it out. Spooned frosting works well too.

Wash and hull the strawberries. Slice each berry lengthwise about three-quarters of the way through so the slices remain attached at the base. Fan each strawberry and place one on top of each cupcake as a decorative garnish. Serve and enjoy.
