How to Roast Garlic and why you absolutely should.

Roasting garlic is one of the simplest ways to change its character: what begins as sharp, spicy, and pungent becomes sweet, caramelized, silky, and mellow. It’s an easy technique that elevates both everyday dishes and special recipes.
The uses for roasted garlic are extensive. In many cases you can substitute roasted garlic for raw garlic to give a milder, deeper flavor. Mix it into mashed potatoes for a rich, nutty undertone; stir it into a creamy pasta with Parmesan and pancetta; blend it with butter for garlic bread; spread it on crusty baguette slices; fold it into goat cheese or aioli; or whisk it with olive oil as a finishing drizzle for vegetables and grilled meats. Roasted garlic adds complexity without overpowering other ingredients.
The inspiration for this post was using roasted garlic combined with olive oil as the flavor base for a Truffled Goat Cheese & Arugula Pizza with Caramelized Mushrooms. The garlic’s sweet, mellow notes pair beautifully with tangy goat cheese and earthy mushrooms.

How to Roast Garlic
This method is quick and foolproof. Preheat your oven to 400°F (204°C). Take a whole head of garlic and slice off about 1/4″ from the top to expose the tips of the cloves.

Place the garlic head on a square of aluminum foil, drizzle 1–2 tablespoons of olive oil over the exposed cloves, then bring the foil corners up and twist to form a small sealed pouch.

Bake for about 40 minutes, until the cloves are deeply golden and tender. Let the head cool slightly, then squeeze each clove from the base to extract the soft, spreadable garlic.
Once you’ve roasted garlic, you’ll find many ways to enjoy it. Store unused roasted cloves in the refrigerator for a few days, or mash them into sauces, dressings, and spreads. Enjoy!

- 1-2 tablespoons olive oil
- 1 head garlic
Instructions

Preheat oven to 400 degrees.

Cut off about 1/4″ of the top of the head of garlic to expose the interior cloves.

Place the head onto a square of aluminum foil and drizzle with 1–2 tablespoons of olive oil.

Twist the corners of the foil to create a small, sealed pouch.

Bake for 40 minutes, or until the cloves are soft and golden.

Allow to cool slightly, then remove the cloves by squeezing from the base of the garlic head.
