I’m excited to share my Mama’s Bake & Fry Mix as part of my Make Ahead Mixes series.
Mama’s Bake & Fry Mix has been a favorite coating in my kitchen for years, long before I started my Trim Healthy Mama journey.
This versatile mix has been used in my family for nearly a decade. My kids enjoyed it so much they called me for the recipe after moving out on their own.
Since adopting the Trim Healthy Mama approach, I’ve adjusted the recipe slightly by using THM Baking Blend or my Low Carb Baking Mix and refining the seasonings to suit our tastes.
The mix is low carb and gluten-free, and it only takes minutes to prepare. One batch will usually coat two family-size packages of chicken and several batches of fish.
Mama’s Bake & Fry Mix makes an excellent substitute for seasoned breadcrumbs. It bakes and fries to a crisp coating on chicken, fish, pork chops, vegetables, and cube steak.

For those following Trim Healthy Mama, this is an S coating.
- 1 large bag pork rinds
- 1 cup onion flakes
- 1 cup Parmesan cheese
- 1 cup Low Carb Bakers Blend or THM Baking Blend
- 2 tablespoons Italian seasoning
- 1 tablespoon dried parsley
- Place pork rinds into a blender and pulse briefly to break them up.
- Add the onion flakes, Parmesan, baking blend, Italian seasoning, and dried parsley to the blender or food processor.
- Pulse until the mixture is evenly combined and reaches a crumb-like texture.
