Ingredients

  • 1 ½ cups almond milk (or your favorite dairy-free milk)
  • ¼ cup dried, pitted dates
  • ¼ cup gluten-free oats
  • ¼ cup cashews
  • 3 fresh peaches (or 1 ½ cups frozen)
  • 1 cup chopped / riced fresh or frozen cauliflower
  • Scrape of 1 vanilla bean or 2 teaspoons pure vanilla extract
  • 2 teaspoons maca root powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon Himalayan salt

Instructions

  1. In the jar of a high-powered blender, combine almond milk, dates, oats and cashews. Blend on high until completely smooth.
  2. Add peaches, cauliflower, vanilla, maca powder, cinnamon and salt. Blend until smooth and creamy.
  3. Pour into two glasses and garnish with fresh peach slices and a sprinkle of cinnamon.
