Winter may be behind us, but soups are welcome in this kitchen year-round. They simply shift with the seasons. In winter I reach for hearty, warming bowls with bold flavors; spring calls for lighter, fresher soups; summer favors cool and refreshing versions; and autumn usually centers on squash and pumpkin. Right now, it’s spring — and this roasted tomato & basil soup is exactly what I want.
This roasted tomato and basil soup is light, fresh, and very easy to prepare. You only need basic ingredients, an oven to roast the vegetables, and a blender or an immersion blender to puree the soup until smooth. It’s a simple recipe that delivers big flavor.
Serve the soup plain for a clean tomato flavor, or dress it up however you like. Toppings I enjoy include cashew sour cream, roasted cherry tomatoes, a drizzle of sriracha, or fresh basil leaves. For a quick raw vegan cream, blend soaked cashews with water, lemon juice, salt, and pepper until silky — it’s a delicious, dairy-free way to finish the bowl.

Roasted Tomato & Basil Soup

Ingredients
- 8 tomatoes
- 1 onion
- 6 cloves garlic
- 1 big handful basil
- 1/2 tsp Italian herbs
- 2 cup water or vegetable stock
- salt and pepper to taste
- 1 tsp smoked paprika (optional)
- 1 hot pepper (optional)
- 1 big handful cherry tomatoes (optional)
Instructions

Preheat the oven to 200°C (400°F). Coat the tomatoes, garlic, and onion with olive oil, place them cut-side down on a baking dish, and roast for about 25 minutes. If you roast cherry tomatoes for garnish, set them aside when done.

Remove the roasted vegetables from the oven and transfer them to a blender or to a pot if you plan to use an immersion blender. Add the basil, Italian herbs, smoked paprika and hot pepper if using, and pour in the water or vegetable stock. Blend until smooth. Bring the soup to a gentle boil, then reduce heat and simmer for about 10 minutes. Season with salt and pepper to taste. Serve warm and enjoy.
