Makes 4 to 5 pancakes, depending on size.

  • 4 oz cream cheese, room temperature and soft
  • 4 eggs
  • 1 tablespoon melted butter
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon banana extract
  • 1 tablespoon powdered stevia (or preferred low-carb sweetener)
  • 4 tablespoons coconut flour
  • 1 1/2 teaspoons baking powder
  • Optional: 1 teaspoon sugar-free chocolate chips for a chocolate-chip variation

Keto Banana Pancakes Recipe Instructions

1. Add all ingredients to a blender and blend on high for about one minute, until smooth. If you don’t have a blender, mix in a bowl with an electric mixer on medium speed. Make sure the cream cheese is fully creamed to avoid lumps.

2. Optional: Stir in sugar-free chocolate chips for a chocolate-chip banana pancake.

3. Heat a frying pan over low to medium heat. Use a small pan to cook one pancake at a time or a larger pan to cook several at once.
