Instructions

  • Preheat the oven to 375°F (190°C). Line an 8-inch square baking pan with parchment paper or foil; if using foil, lightly spray the foil with cooking spray to prevent sticking.
  • In a small bowl, whisk together the flour, baking soda and salt. Stir in the quick-cooking oats until evenly distributed.
  • In a medium bowl, beat the packed brown sugar and softened butter with an electric mixer on medium speed until smooth and blended. Add the flour‑and‑oat mixture and stir until a crumbly dough forms. Remove ¾ cup of the dough and toss it together with the semisweet chocolate chips; set this mixture aside for the topping.
  • Press the remaining dough evenly into the prepared 8-inch square pan to form the base. Spread the seedless raspberry jam evenly over the crust, leaving the jam close to the edges so it bakes into the dough. Sprinkle the chocolate chip and oat crumble evenly over the jam layer.
