I’m genuinely proud of this breakfast creation. The layers combine contrasting textures and flavours that work beautifully together — especially when you need something comforting after a late night.

Imagine the stack: start with a sourdough crumpet, toasted twice until crisp. I like them on the crunchy side. Place the hot, buttered crumpet on the plate and be aware that hot crumpets can make plates sweat; serving on a wooden board helps avoid a soggy bottom.

Yes, using a chopping board as a plate is practical as well as stylish.

In a small bowl, mash half a ripe avocado with about 1 teaspoon of lemon juice. The lemon keeps the avocado from browning and adds a bright, fresh note to the flavour profile.

Next comes the egg. You can fry or poach it — I poached two eggs in a pan using poaching rings to achieve neat, photo-ready results. Poaching takes a little more effort, but the silky yolk is worth it.

Add crispy, grilled smoked streaky bacon for a salty, crunchy contrast. Layer the bacon over the eggs, then finish with a second toasted crumpet as the lid. For maximum decadence, spread a little salted butter on the top crumpet before closing the burger.

I recommend eating this with a knife and fork — it’s delicious, but messy if you try to pick it up.

I’m grateful to Iceland for introducing me to their Luxury Sourdough Crumpets. These have a noticeable advantage in flavour and texture: they’re dairy-free, and include oat grains, sunflower and flax seeds for added bite and interest.

Instructions
