Creamy Bacon and Scallion Dip with a Spicy Kick

For my contribution to the Tabasco 10-Ingredient challenge, I wanted something straightforward and crowd-pleasing. This bacon and scallion dip is perfect for snacking with raw vegetables or pita chips—ideal for game day or a casual get-together. You can also spoon it into a tortilla for a quick wrap.

The pureed white beans create a rich, silky base; if you didn’t know what went into it, you might mistake it for a cheesy dip. The flavor gets a pop from Tabasco sauce and the freshness of sliced scallions, while crisp bacon adds texture and smoky savor.

The recipe is quick and easy to put together. The only real patience test is waiting for the bacon to become very crisp and cool enough to crumble—there’s nothing worse than soggy bacon in a dip, and it’s hard not to snack on it while it cools.

Spicy Bacon and Scallion Dip

Ingredients

  • 4 ounces bacon
  • 1 can 15.8 ounces great northern beans, undrained
  • 1 teaspoon olive oil
  • 20 dashes Tabasco® Original Red Sauce
  • 2 scallions white and green parts, sliced

Instructions

  • Cook the bacon until very crisp. Drain on paper towels and allow to cool, then crumble.
  • In a food processor, puree the beans until very smooth, about 30 seconds. With the processor running, drizzle in the olive oil and add the Tabasco in pulses until combined.
  • Stir in half of the crumbled bacon and half of the sliced scallions. Transfer to a serving dish and sprinkle the remaining bacon and scallions on top.
  • Serve at room temperature or chilled. Enjoy with chips, vegetables, or spread in a wrap.
