A warming, protein- and iron-rich soup that’s budget friendly. Noodles are optional.

Ingredients

Basic Soup

  • 3 lbs chicken gizzards
  • 2 cups chicken broth
  • Salt and pepper to taste

Optional Additions

  • Fresh parsley or chives to garnish
  • Keto or Carnivore noodles
  • Other seasonings or vegetables (celery, onion)

Instructions

  1. Place all ingredients (except noodles, if using) into an Instant Pot, slow cooker, or large soup pot.
  2. Instant Pot: Lock the lid, set the valve to sealing, and use the Soup button or Manual for 40–60 minutes depending on gizzard size. Allow a natural release for 10 minutes.
  3. Slow cooker: Cook on Low for 8–10 hours.
  4. Stovetop: Simmer for 2–3 hours or until gizzards are very tender.
  5. When the gizzards are tender, add noodles if using and warm through.
  6. Garnish with fresh herbs.
  7. Ladle into bowls and enjoy.

Notes

Store leftovers in the refrigerator. The soup may set into a gel—that’s natural collagen. Thin with additional chicken broth or water when reheating if you prefer a looser broth.
