Unlike a traditional cheesecake served in a slice, these are made as small, portable bites that are perfect for parties, lunchboxes, or a quick dessert. The cheesecake filling is silky and light thanks to soaked cashews, while the strawberry adds a bright, fruity note. Dipping each bite in chocolate gives a crisp contrast to the soft center and makes them feel indulgent without dairy.

The flavor profile is reminiscent of classic fruit-filled chocolate confections, but fresher and lighter. The strawberry presence is delicate but clear, complementing the creamy cashew base. The chocolate coating adds texture and a pleasant richness that balances the natural sweetness of the filling.

Vegan and Dairy-Free Cheesecake

This recipe uses soaked cashews in place of cream cheese, delivering a rich, creamy texture without dairy or eggs. The filling blends smooth and holds up well once chilled. For the coating, use dairy-free and soy-free chocolate sweetened to your preference. Many specialty brands offer coconut sugar– or maple-sweetened options if you want to avoid refined sugar. The result is a naturally sweetened cheesecake bite that still feels decadent.

Tools Needed

A high-powered blender or food processor is essential to achieve an ultra-smooth cheesecake texture. A high-quality blender will give the creamiest result, but a food processor can also work well if you scrape the sides and blend thoroughly.

Store these bites in the refrigerator to keep the chocolate firm and the interior soft. If you prefer a firmer center, keep them in the freezer and let them soften slightly before serving. Wrapped individually, they also make an attractive homemade gift or party favor.

Ingredients

  • 1 cup cashews, soaked
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla
  • 2 tablespoons lemon juice
  • 1 cup sliced strawberries (about 5 oz)
  • 1 cup dairy-free chocolate chips

Instructions

  1. Drain the soaked cashews, rinse well, and add them to a high-powered blender or food processor. Add the melted coconut oil, maple syrup, salt, vanilla, and lemon juice. Blend until the mixture is completely smooth, stopping to scrape the sides as needed.
  2. Add the sliced strawberries and continue blending until the filling is very smooth and uniformly pink. Transfer the cheesecake mixture to a glass container and chill in the refrigerator for at least 4 hours, or until thickened.
  3. Line a small baking sheet with parchment paper. Remove the chilled cheesecake mixture and scoop into roughly 1-tablespoon portions. The rounds may be imperfect — that’s fine. Arrange them on the parchment-lined sheet and freeze for at least 4 hours or overnight to firm up.
  4. When the bites are solid, melt the dairy-free chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each interval, until smooth and fully melted.
  5. Dip each frozen cheesecake ball into the melted chocolate, letting excess chocolate drip back into the bowl, then place the dipped bite back on the parchment. Once all bites are coated, refrigerate to set the chocolate. Store the finished bites covered in the refrigerator.
