Toss the pieces with avocado oil, salt, and pepper, making sure each piece is evenly coated. Arrange the potatoes on a tray so the skin side faces up and a non-skin side sits against the pan; this contact encourages browning and prevents the pieces from drying out. Roast slowly at a moderate temperature until the centers are soft and the edges have a deep, golden color.

  • Wash and scrub the sweet potatoes, leaving the skins on. Cut them into large, irregular chunks to maximize edges for caramelization.
  • Line a rimmed baking sheet with foil or parchment. Spread the chopped sweet potatoes in a single layer. Drizzle with avocado oil, sprinkle with salt and pepper, and toss so each piece is evenly coated. Arrange pieces so the skin side is up and a flesh side rests on the pan to promote browning and keep the interior moist.
