How to Make Oatmeal Pumpkin Bars

This recipe is straightforward enough for kids to help with. The process is simple and quick:

Preheat the oven to 350°F and prepare an 8 x 8-inch baking pan. Lining the pan with parchment paper makes it easier to lift the bars out for neat slicing later—grease the top of the parchment if you prefer a clean removal. If you don’t mind serving from the pan, simply grease the pan and skip the parchment.

Combine the dry ingredients in a medium bowl: flour (all-purpose works well; whole wheat can be substituted), old-fashioned oats, pumpkin pie spice, salt, and baking soda. Stir to blend evenly.

In a larger bowl, lightly beat the eggs, then stir in the pumpkin puree (use canned pumpkin puree, not pumpkin pie filling), applesauce, light brown sugar, and vanilla extract. Mix the wet ingredients until smooth.

Add the dry ingredients to the wet and mix thoroughly, scraping the bottom of the bowl to incorporate every bit of batter. Fold in half of the pepitas and chopped pecans, then spread the batter evenly in the prepared pan. Sprinkle the remaining pepitas and pecans across the top for texture and visual appeal.

Bake for 25–30 minutes, or until the center is set and a toothpick inserted near the middle comes out clean. The bars will look similar to a baked cake when done. Allow them to cool before cutting into nine squares.
