This Berry Cheesecake Flag Dessert is a refreshed take on a favorite summer treat, updated for Independence Day. Instead of only strawberries, this version uses blueberries for the blue canton and strawberries to form the red stripes of the American flag.
This American Flag Cake is ideal for any summer patriotic celebration — Fourth of July, Memorial Day, or Labor Day. It’s festive to look at and delicious to eat.

Why You Must Make
- The combination of a buttery shortbread crust, light whipped cheesecake filling, and ripe berries is a winning trio.
- It’s simple to prepare, even for a first-time baker.
- The finished dessert makes a memorable, themed showpiece that will impress guests.
I make a version of this every summer. The filling — whipped cream folded into sweetened cream cheese with a touch of lemon — is always a hit. The crust is an easy shortbread that bakes to a tender base. For the topping, slice strawberries in half and arrange them cut side down to form red stripes, then add rows of blueberries in the corner to create the blue field. A light glaze of clear red jelly gives the berries a glossy finish and keeps them looking fresh.

Recipe Tips:
- This Cheesecake Dessert can be made the same day you serve it if you start early. Bake and cool the crust, then chill the assembled dessert for a couple of hours so the filling firms up.
- Pick the freshest, brightest strawberries and blueberries you can find. You can substitute raspberries for the stripes if you prefer.
- PRO Tip: Use cold butter in the crust. Small cold bits of butter create steam while baking and give the crust a slightly flaky texture.
- PRO Tip: Soften the cream cheese to room temperature before mixing so the filling becomes smooth and lump-free.
- PRO Tip: Glaze the berries with a clear red jelly for shine and to help preserve their appearance. If red currant jelly isn’t available, another clear red jelly works well; avoid jams or preserves because they are not as clear.
The recipe requires at least two hours of chilling time, but the active work is straightforward. Make it in the morning and leave it in the refrigerator while you prepare the rest of your meal and festivities.
Helpful Tools:
- Pastry blender — to cut cold butter into the flour for the crust.
- 9-speed hand mixer — for whipping the cream and blending the filling smoothly.
- Pastry brush — to apply a thin glaze over the berries for a glossy finish.
