Low-Carb Carbquik Cinnamon Pancakes with Flaxseed

Carbquik is a popular low-carb, high-fiber baking mix that works well for people following reduced-carb lifestyles. It’s versatile enough for breads, muffins, biscuits and pie crusts, and it makes excellent pancakes. These Carbquik pancakes are flavorful, satisfying and simple to make.

How do you make Carbquik pancakes?

There’s a basic recipe printed on the box, but Carbquik is forgiving and open to improvisation. Here I made a small batch suitable for two people; double or triple the ingredients if you’re cooking for more. Start by combining the dry ingredients, then add the egg and liquid. I include cinnamon and ground flaxseed for extra flavor and texture, but both are optional.

Pancake batter thickness is a matter of preference. Add more milk or water for thinner, crepe-like pancakes, or keep the batter thicker for tall, fluffy cakes. I prefer the thicker style that puffs up nicely when cooked.

I cook these pancakes in ghee, which adds a buttery flavor and helps prevent sticking, but any nonstick spray or oil you prefer will work fine. Thicker pancakes will take a bit longer to cook through, so keep an eye on the bottom for even browning. Bubbles on the surface can signal readiness to flip, though sometimes they’re less obvious—so check the underside before turning.

Serve the pancakes with your favorite toppings. I enjoy butter and syrup, but feel free to use fresh berries, sugar-free syrup, nut butter or whipped cream. There are now many keto-friendly syrup options that avoid artificial sweeteners if you prefer.

Is Carbquik Keto?

Whether Carbquik fits a strict keto definition depends on your personal guidelines. The mix can include wheat-derived ingredients, so check the product label if you follow a strict ketogenic plan. Some people consider it acceptable within a low-carb or flexible keto approach, while others do not. If you miss traditional bread and baked goods, Carbquik may be worth trying in moderation.

Total Time:
15 minutes

Ingredients

  • 1 cup Carbquik
  • 1/2 cup milk
  • 1/4 tsp cinnamon (optional)
  • 1 tbsp ground flaxseed (optional)
  • 1 egg
  • 1/4 cup water

Instructions

  1. Heat a skillet to medium or medium-high heat.
  2. Whisk together the dry ingredients, then add the egg, milk and water until a batter forms.
  3. Add a bit of ghee or use nonstick spray to grease the pan.
  4. Pour about one-third of the batter into the pan for each pancake and let the underside brown before flipping.
  5. Cook until pancakes are done and both sides are golden.

Notes

We prefer thicker pancakes, so this batter is kept a bit dense. Cinnamon and flaxseed add flavor and texture but are optional.
