Cheesy garlic asparagus is quick and simple to prepare, ready in about 10 minutes. This low-carb, keto-friendly side dish is comforting, flavorful, and perfect for busy weeknights or a special meal.
This is the first asparagus recipe I’ve added here, but I plan to share more vegetable dishes. I love roasted asparagus because it cooks quickly and pairs beautifully with melted cheese for an irresistible side.

Ingredient Notes
- Asparagus – Thick stalks roast well in about 9 minutes total. If you use thin stalks, reduce the oven time. Trim the tough ends, roughly 1–2 inches.
- Red Crushed Pepper – Optional. Add for a touch of heat or omit if you prefer no spice.
How To Make
- Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
- Trim and rinse the asparagus, pat dry, then coat with olive oil. Season with salt, black pepper, minced garlic, and red crushed pepper if using.
- Bake for 6 minutes. Remove from the oven, sprinkle with mozzarella and parmesan, return to bake for another 2 minutes, then broil 1 minute or until the cheese is fully melted and lightly browned.
Top Tip
For an even quicker method, blanch the asparagus in boiling salted water for 1–2 minutes, transfer to a baking sheet, top with cheese, and broil for 1–2 minutes until melted.
How Do You Select Asparagus?
Asparagus is available year-round, but it’s best from February through June. Choose firm spears with tightly closed tips. Green, purple, or white asparagus all work well in this recipe.

- 1 cup mozzarella cheese
- 2 tbsp parmesan cheese
- 2 garlic cloves, finely minced
