Hemp Protein Bars – Chocolate Cranberry

Equipment

Ingredients

  • 1 cup almond flour
  • 2 cups dates pitted
  • ½ cup almond butter
  • ½ cup cacao or cocoa powder
  • ½ cup hemp seeds
  • ½ teaspoon salt sea salt or kosher
  • ¼ cup cranberries dried

Instructions

  • Line a 9-inch square baking pan with parchment paper.
  • Place all ingredients except the cranberries in a food processor and pulse until well combined.
  • Add the cranberries and pulse a few times to incorporate them evenly.
  • Press the mixture firmly and evenly into the prepared pan.
  • Refrigerate uncovered overnight to allow the bars to firm up.
  • Cut into bars and enjoy.

Notes

The bars may feel soft at first; refrigerating them uncovered overnight firms them up nicely.

You can substitute any nut or seed butter for almond butter with the same results.
