Blackstone Lazy Beef Enchiladas is an adapted recipe from my “I Love My Blackstone Griddle” Cookbook.
This easy, budget-friendly dinner is one of many griddle recipes in my cookbook, and there’s also a chicken version included. It’s designed to be quick, low-effort, and perfect for feeding a family.

How to make Blackstone Lazy Beef Enchiladas
The recipe is built from canned and pantry ingredients and comes together right on your griddle. Prepare a tray with the cans and toppings for easy transport to the Blackstone or flat top griddle.

The only real prep is cutting 6 to 8 yellow corn tortillas into roughly inch-sized pieces or strips so they break down nicely on the griddle.

Preheat your Blackstone or other flat top griddle to medium. Add a little cooking oil, then brown 1 pound of ground beef, seasoning with kosher salt, black pepper, and your preferred taco or fajita seasoning.
Once the beef is mostly cooked, add the cut tortillas and pour two (10-ounce) cans of green enchilada sauce over the mix. Stir to combine so the tortillas soak up the sauce and start to soften.

Stir in one (4-ounce) can of green chiles, a drained (14-ounce) can of corn, and a drained and rinsed (14-ounce) can of black beans. Add about 1/2 cup sour cream to add creaminess, then taste and adjust with more kosher salt, pepper, and taco or fajita seasoning as needed.

When everything is heated through and well combined, add the cheese. I like to add half the shredded cheese, mix it in, then top with the remaining cheese so it melts into a gooey layer.

Mix it all together on the griddle and that’s it… Blackstone Lazy Beef Enchiladas are done!
Once the cheese is melted, remove the mixture from the griddle. I often scoop it directly onto a tray. Serve topped with hot sauce and a crunchy garnish like Fritos or crushed tortilla chips for texture.

Ingredients
- cooking oil of choice
- 1 pound ground beef
- kosher salt, pepper, taco or fajita seasoning blend
- 6 to 8 yellow corn tortillas cut into inch size pieces or strips
- 2 (10-ounce) cans green enchilada sauce
- 1 (4-ounce) can green chiles
- 1 (14-ounce) can corn drained
- 1 (14-ounce) can black beans drained and rinsed
- 1/2 cup sour cream
- 2 cups shredded cheese of choice
- Optional: hot sauce, Fritos or tortilla chips
Instructions

Preheat your Blackstone griddle to medium heat. Add cooking oil, ground beef, kosher salt, pepper, and taco or fajita seasoning. Cook 5 to 6 minutes, breaking it apart with spatulas.

Add the tortillas, enchilada sauce, green chiles, corn, black beans, sour cream, more kosher salt, pepper and taco or fajita seasoning. Mix together and cook on the griddle for 2 to 3 minutes.

Add half of the cheese, mix together, and top with remaining cheese. Remove the dish once cheese is melted (I just scooped mine onto a tray straight from the griddle).

Top with hot sauce and Fritos or crushed tortilla chips if desired.
